A couple of years ago, it was hard to convince me to so much as sip a green smoothie, so I find it amusing now that they are easily one of my favourite breakfasts. I love using spinach as the main base to most of my smoothies, but this one is particularly fresh and summery with the pear and pineapple.
You will need (serves 1):
- A big handful of spinach
- One pear, chopped
- Three slices of fresh or frozen pineapple
- 1 tsp flaxseeds
- 1/2 cup almond milk
- 1/2 cup water
I’d recommend fresh or frozen pineapple, because the canned stuff often has lots of added sugar, but if you can find one that doesn’t, go for it. I usually buy my pineapple fresh and chop it up, then freeze half of it and eat the other half fresh. The frozen fruit gives a certain creaminess to this smoothie that might otherwise be more of a juice consistency. Another option is, of course, to add a few ice cubes.
Pop everything into a blender, making sure to put the liquid in first to help your blender out and make sure nothing sticks. Pulse until smooth and try to drink it as soon as possible to get most of the nutrients. That said, I have made this the night before when I knew I didn’t have five minutes to spare in the morning and it keeps perfectly well in an airtight jar.
