    Overnight Oats

    Man oh man. See, I love oats (I stuff them in everything these days), but I’d most accurately describe myself as a die-hard granola lover. I’m all about texture when it comes to food, and that crunch that granola provides is irreplaceable.

    That said, I thought I’d give overnight oats a shot. Winner winner chicken dinner. Or is it winner winner oat breakfast? Moving on…

    Overnight Oats

    Ingredients
    • ½ cup rolled oats
    • ½ cup almond milk (or your milk of choice)
    • 1 grated apple
    • ½ tbsp maple syrup
    • 1 tsp cinnamon powder
    • a pinch of salt
    • Half a diced mango
    • A handful of blueberries
    • 1 tbsp Greek yoghurt (or an alternative if you’re vegan)
    • ½ tbsp pumpkin seeds
    • Three or four nuts, chopped (I used almonds and a pecan)
    Instructions
    1. Just grate your apple into a bowl (keep the skin on, it’s where all the good stuff is). Add your oats, milk, maple syrup, cinnamon and salt, and mix. Pop it into an airtight container (tupperware or jar, whatever strikes your fancy) and into the fridge overnight. If you don’t have that length of time, leave it for at least two to four hours.
    2. Of course, toppings are entirely optional and you can swap it out for literally anything you desire. I used mango because it’s delicious and I love it and blueberries for the antioxidants and because I had them in the fridge. As I mentioned before, I like a bit of crunch, so this would have been missing something without nuts or seeds for me.
    3. The additional of the yoghurt gives it an added creaminess that I quite like. A lot of recipes call for this to be included in the overnight oats, and you can certainly do that, but I prefer the fresh flavour of adding it on in the morning. It also ensures the original recipe remains vegan, which is great.

    When I made this, I thought it would be good for one portion, but I swear to God, it took me about an hour and a half to be able to finish it. Five hours after I took my last bite, I still couldn’t think about eating, so let’s say this a portion for two. That said, if you find you can finish it, more power to you. Alternatively, double the recipe and split it three ways for a good-sized breakfast.
