    Healthy Caramel Peanut Butter Cups

    July 19, 2018 | Leave a Comment

These are one of my favourite things to make. The process couldn’t be simpler, delivers incredibly delicious results, and keeps me from snacking on alternatives that I enjoy WAY less and are also not as good for me. One of the fantastic things about them, too, is that they’re so satisfying, I have rarely had two — one (for me) is a perfect portion as a sweet snack.

The addition of dates here gives it a creamy, caramel flavour that is simply divine! These peanut butter cups go above and beyond and they're easily one of my favourite sweet snacks to whip up. Give them a go -- you won't regret it!
    Author: Sand Kitchen
    Serves: 7
    Ingredients
    • 100g dark chocolate (I used 78%)
    • 6-7 tbsp peanut butter (I used my homemade one)
    • 3-5 dates (optional)
    Instructions
    1. Melt two thirds of the dark chocolate in the microwave (or over a double boiler) for approximately 3 minutes, stopping every 30 seconds to stir
    2. To temper the chocolate (ie stop it from melting at room temperature), keep a third in the fridge/freezer and add it in when the chocolate comes out of the microwave and stir it in until it melts
    3. Pour a teaspoon of chocolate into the bottom of 6-7 cupcake cases and put in the freezer for 2 minutes
    4. Add a tablespoon of peanut butter on top, and top with half a date (optional) and pop it back into the freezer for 2 minutes
    5. Add another 1½ tsp of melted chocolate onto each, and refrigerate to set.
    6. Enjoy!
