Healthy Caramel Peanut Butter Cups

These are one of my favourite things to make. The process couldn’t be simpler, delivers incredibly delicious results, and keeps me from snacking on alternatives that I enjoy WAY less and are also not as good for me. One of the fantastic things about them, too, is that they’re so satisfying, I have rarely had two — one (for me) is a perfect portion as a sweet snack.

The addition of dates here gives it a creamy, caramel flavour that is simply divine! These peanut butter cups go above and beyond and they’re easily one of my favourite sweet snacks to whip up. Give them a go — you won’t regret it!
Ingredients
  • 100g dark chocolate (I used 78%)
  • 6-7 tbsp peanut butter (I used my homemade one)
  • 3-5 dates (optional)
Instructions
  1. Melt two thirds of the dark chocolate in the microwave (or over a double boiler) for approximately 3 minutes, stopping every 30 seconds to stir
  2. To temper the chocolate (ie stop it from melting at room temperature), keep a third in the fridge/freezer and add it in when the chocolate comes out of the microwave and stir it in until it melts
  3. Pour a teaspoon of chocolate into the bottom of 6-7 cupcake cases and put in the freezer for 2 minutes
  4. Add a tablespoon of peanut butter on top, and top with half a date (optional) and pop it back into the freezer for 2 minutes
  5. Add another 1 1/2 tsp of melted chocolate onto each, and refrigerate to set.
  6. Enjoy!
