One thing I can never understand is when people don’t like salad. I’m sorry if you’re one of those, but I really hope I can change your mind with this salad. It is divine, looks absolutely stunning and really hits the spot!
You will need:
- At least 1 cup (I go for about two or three) greens
- One grilled chicken breast, sliced
- Half an apple, sliced
- Half a bell pepper, chopped
- Half a tomato, diced
- A few walnuts, chopped (or your favourite nut)
- A handful of edamame beans
- 1 tbsp hemp seeds
For the dressing:
- 1 lemon, squeezed
- 1/2 tbsp olive oil
- 1-2 tsp mustard
- 1 tsp dried basil
- Pinch of salt
Then it’s as simple as mixing the dressing together well to combine, putting the salad together and bloody enjoy!
I love the addition of hemp seeds and edamame (I get mine frozen) to bump up the protein levels (in addition to the chicken, of course), and everything else for flavour.
You can mix and match this to your liking, and mine always vary, but this one is a genuine winner. This dressing is also my go-to, and everyone always, always asks how I make it.
