Spanish-inspired Frittata

Ingredients
- One potato, chopped, fried or baked
- 3 eggs, lightly beaten
- 1/2 courgette spiralised*
- 1 onion, diced
- 1 tsp cumin
- 1 tsp garlic powder
- 1 1/2 tsp dried oregano
- Salt to taste
Instructions
- I baked my potato because my oven was already on, and it’s healthier, so I added all the spices except the salt to them with a drizzle of olive oil in the oven for 15 minutes.
- Pop your onions into a pan with some olive oil and cook until translucent, then add your courgetti for about four to five minutes.
- When you’re happy with the firmness of your courgetti, add your cooked potatoes and pour on your beaten eggs (with a pinch of salt mixed in).
- Cover and cook on a low heat for 20 minutes.
Et viola! Dinner is ready. This gave me a bit of a throwback to 2010 when I was spending my Reading Week in Barcelona with a university friend. Her dad made us the most amazing potato frittatas. Mine is definitely not the same, but is inspired by his.
