Spanish-inspired Frittata

I put this together quickly — emphasis on quickly — when I was meal prepping one night. You can actually see me make this in this video!

Spanish-inspired Frittata

Ingredients
  • One potato, chopped, fried or baked
  • 3 eggs, lightly beaten
  • 1/2 courgette spiralised*
  • 1 onion, diced
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 1/2 tsp dried oregano
  • Salt to taste
Instructions
  1. I baked my potato because my oven was already on, and it’s healthier, so I added all the spices except the salt to them with a drizzle of olive oil in the oven for 15 minutes.
  2. Pop your onions into a pan with some olive oil and cook until translucent, then add your courgetti for about four to five minutes.
  3. When you’re happy with the firmness of your courgetti, add your cooked potatoes and pour on your beaten eggs (with a pinch of salt mixed in).
  4. Cover and cook on a low heat for 20 minutes.

Et viola! Dinner is ready. This gave me a bit of a throwback to 2010 when I was spending my Reading Week in Barcelona with a university friend. Her dad made us the most amazing potato frittatas. Mine is definitely not the same, but is inspired by his.
